I will start this by saying a few people who ate these had never had one before and had no clue what they are.
I LOVE rock cakes, their dry texture is addictive with a cup of tea and I could eat loads. Every time I watch the first hobbit film, and a dwarf eats one from Bilbo's ladder, a timer starts in my head counting down to the next batch. mmmmm.
Ingredients:
- 230g Plain Flour
- 2 teaspoons of Baking powder
- 1/2 teaspoon of bicarbonate of soda
- 100g butter, soft or beaten.
- 50g caster sugar
- 30g Currants
- 60g Raisins
- 60g Sultanas
- 1 medium egg
- 1 tablespoon of milk
- 3 teaspoons of mixed spice
- Demerara sugar for sprinkling over the top.
Method:
Super hard recipe this one.
Put all the ingredients in a bowl and mix/beat until together in a dough, and there are no pieces of butter visible (about 3 minutes with an electric beater).
Chuck some greaseproof on a baking tray.
Use a dessert spoon to spoon the mixture onto the tray.
Sprinkle a pinch of Demerara over each, and bake in the oven at 180 degrees for 13 minutes until brown at the edges and firm on the top.
Eat/Cool your choice.
