The Sourdough Chronicles - Refreshing/Feeding your starter

Your sourdough should now be alive and kicking!


Did you you know that official regulations state that for a bread to be called sourdough it has to have a pH of between 4.0 and 4.3. For context, the pH of Orange juice is 3.5, vinegar is 2.9 and Coca Cola is 2.5. The reason Coker and orange juice taste much sweeter is the vast amounts of sugar they contain.



Anyway, onto refreshing or feeding your starter to keep it alive! You need refresh it with 50% of it weight.


My starter weighs 300g, So I need to add 150g in total. That is 75g if water and 75g of any bread flour.


Mix it together, and don’t worry if it sinks, it will grow again!


Easy.
